Simple Carrot Cake

Some things just taste better when kept simple. I believe carrot cake is one of them. I prefer it without any fancy icing, as it is so delicious in itself. Well, carrot is healthy, so why not make it healthier?
You can easily avoid all that fat and sugar that go into the frosting/icing. Even when I consider it look wise, I love the natural orange colour of the cake and I don't want to cover it up with icing. So, here goes my easy recipe for a mouth-watering carrot cake.


Carrot Cake

INGREDIENTS:

Grated carrot: 1 cup
Butter: 3 tbsp
Oil: 2 tbsp ( Any unflavoured oil like vegetable oil/ canola oil)
Sugar: 1 cup
Eggs: 4
All purpose flour: 1 1/4 cup
Baking powder: 1 tsp
Salt: 1/2 tsp
Vanilla essence/ extract: 1 tsp

PROCEDURE:

Pre-heat your oven at 350 F.

Take 3 tbsp of butter and 2 tbsp of oil. Add 1 cup of sugar to it.


Mix it thoroughly till it get light and fluffy. Then add in the eggs one by one and keep mixing till everything is well blended.




Now sieve the all purpose flour, baking powder, and salt into the mixture. Add the vanilla extract and mix well.


Finally, add the grated carrot into the batter and fold in gently.



Prepare your baking pan with oil/butter and flour. Pour the cake batter into the pan.


Let it bake in the oven at 350 F for 30 to 40 minutes or till a toothpick inserted into the center comes out clean. 



Yummy carrot cake is ready to serve.
