3 in 1 Frozen Yogurt Pops

There are a few random images that flash in front of the eyes whenever one thinks of summer. Growing up in a tropical or sub-tropical country, summer had always been the most prolonged and dreadful season of the year. But it definitely had its gifts too, like summer vacation which invariably lead to summer trips, all kinds of juicy and delicious tropical fruits, especially mangoes, and of course homemade popsicles of various flavors. This is my third summer in Kansas City, and we KC people know how hot it gets here (up to 110 F) which is often comes as a surprise for my people back in India as they generally relate to cooler temperatures when they think of U.S.A. The thing I miss most here in summer are those mangoes as the mangoes here taste and smell nowhere near to Indian mangoes. But certain things have remained same like the summer travel plans and popsicles. 

If you have been following my blog, you would know that I have developed a special kind of love for frozen yogurt things. Not only are these things yummy but also much healthier than your butter and cream loaded ice-creams. So check out one of earlier posts for my recipe of a delicious Chocolate Frozen Yogurt Pie if you haven't already. And this time I bring to you a super fun, extremely tasty and incredibly easy recipe for a 3 in 1 frozen yogurt popsicle. If you don't have popsicle trays handy, don't worry as I too used paper cups. I think its even easier to take out the pops from paper cups as you can rip apart the cups and the pops stay intact. I have used the classic combination of chocolate-vanilla-strawberry. But you can always choose the ones you like.

3 in 1 Frozen Yogurt Pops


INGREDIENTS: (for 2 to 3, depending on the size of the cups)

Plain yogurt: 10 tbsp (use thick yogurt or drain excess water before using)
Sweetened condensed milk: 10 tbsp
Melted dark chocolate: 3 tbsp
Vanilla extract: 1 tsp
Strawberries (frozen): 6 to 8

REQUIREMENTS:

Paper cups; 2 to 3 
(Depending on the size you choose. Don't go for the bigger ones as it would be difficult to handle.)

Popsicle sticks: 2 to 3
(according to the number of cups)

PROCEDURE:

Layer I

Mix plain yogurt (3 tbsp), condensed milk (3 tbsp) and melted dark chocolate.


Fill 1/3rd of the cups and freeze for 30 minutes.


Take out and insert the popsicle sticks in the middle.



Layer II

Mix plain yogurt (3 tbsp), condensed milk (3 tbsp) and vanilla extract.


Fill until 1/3rd of the cups are still unfilled from the top and freeze for 1 hour.


Layer III

In a blender blend plain yogurt (3 tbsp), condensed milk (4 tbsp) and frozen strawberries.


Fill the rest of the cups and freeze overnight.


Cut open the paper-cups.


And you are more than ready for summer. Enjoy!!
